Baker's note

Protein bakes a little differently, it's more sensitive.

A protein loaf is not a cake loaf. Two habits from ordinary baking — beating the batter smooth and leaving it in "just a bit longer" — are the two things that will dry it out. Do less than you think.

Two bananas, then stir

Empty the bag into a bowl and add 2 ripe bananas along with your eggs, oil and water. Stir just until the dry streaks disappear — a few lumps are the sign you did it right.

A 9-inch loaf pan

Use a greased 9-inch (9×5) pan — the size is what gives the loaf its rise and its bake time. Mini pans work too: one bag fills 3 to 6 depending on their size, for individual servings.

325°F, and check at 40

Bake 40 to 50 minutes, but start checking at 40 — you don't want to overbake it or it starts to dry out. Pull it when a toothpick comes out with a crumb or two clinging.

What's in the bag

One bag, one bowl, one loaf

All-natural ingredients you can read out loud, and nothing artificial. Add two bananas and your wet ingredients and it's ready for the pan — no stand mixer, no conversion math, no chalky protein aftertaste.

Ways to eat it

Bake once, eat all week

Sunday, 50 minutes

Bake a loaf

One bag is eight servings, so Sunday afternoon decides the whole week. A slice is 19g of protein you didn't have to shake.

Individual servings

Or 3 to 6 mini loaves

Divide the batter into mini pans instead — portioned protein for lunchboxes, gym bags and sideline snacks. Start checking them early.

Keeping it

Store, or freeze

Airtight on the counter for three days, in the fridge for a week, or sliced and wrapped in the freezer for three months. Thirty seconds in the microwave brings a frozen slice right back.

"I've tried every protein baking mix out there and they all taste chalky. Bell's banana bread is the first one that actually tastes like banana bread."
— John S.
